We cook our sausages at 164 - 170 degrees using real hickory hardwood, giving our sausages a natural hickory smoked flavor. Our recipe is simple and one-of-a kind: we stuff our sausage with quality ingredients, then smoke it to perfection to give you a fully-cooked hickory smoked sausage that's bursting with flavor.

Our sausages contain only four main ingredients: pork shoulder, rib trimmings, pork loin and pork ham. We place these ingredients in natural casings that allow our sausages to soak up the smoke flavor during the cooking process. Fully cooked and packaged at our location in Stonewall, LA, you can enjoy our sausages straight out of the package, microwaved, or grilled.

Grilling Tips

There are several ways to cook our sausages but the overall favorite among our loyal customers is grilling over gas, charcoal or wood grills. Some split the sausages before placing on the racks to grill and some leave them whole and slice them afterwards. Either way, they are fantastic when kissed by a flame for several minutes.
